Sturgeon Recipe

Sturgeon is probably one of my most challenging fish to cook even though it’s one of the easiest to handle in the kitchen. The sturgeon is made up mostly of cartilage and lack scales and bones. They have a dense texture (in my opinion) unlike the light flakey texture of a fresh fillet of halibut.

When cooking sturgeon I like to keep a few things in mind. Do not over cook this fish as it becomes rubbery and unpleasant to chew. Sturgeon will also take on any flavor you give to it so be generous with sauces, glazes, and marinades. When cooked properly sturgeon makes one heck of a meal.
